Recheio<br />
⦁<span class="Apple-tab-span" style="white-space: pre;"> </span>3° – Em uma panela, coloque 10ml de água, 50g de açúcar e leve ao fogo alto até ferver. Acrescente 25g de amêndoa sem pele, 25g de avelã sem pele e misture bem. Retire a panela do fogo e continue mexendo até que as amêndoas e avelãs fiquem esbranquiçadas.<br />
⦁<span class="Apple-tab-span" style="white-space: pre;"> </span>4°- Leve de volta ao fogo e deixe derreter o açúcar que cristalizou. Quando os frutos secos estiverem cristalizados e começarem a estalar, espalhe-os em uma assadeira untada com óleo e deixe esfriar.<br />
⦁<span class="Apple-tab-span" style="white-space: pre;"> </span>5°- Transfira o crocante obtido para o processador e triture até obter um pó fino. Misture este pó obtido com 150g de chocolate meio amargo picado e derreta-o em banho-maria. Deixe esfriar.<br />

Bata a outra cebola no liquidificador e vá adicionando-a aos poucos à massa, batendo com uma colher, de pau até ficar uma massa fofa. Com uma colher modele os acarajés e frite-os no azeite de dendê quente. Faça o vatapá: Ponha o pão de molho na metade do leite de coco e deixe descansar por três horas. Escorra e ponha no liquidificador. Acrescente o amendoim, a castanha de caju, o gengibre, a cebola, o alho, o camarão seco e o sal. Bata bem e leve ao fogo. Adicione aos poucos o restante do leite de coco e o azeite de dendê e mexa por 20 minutos aproximadamente ou até formar uma pasta firme. Sirva o acarajé recheado de vatapá, camarão seco e molho vinagrete.<br />

Dê preferencia para panelas que você tem mobilidade tipo caçarola, vai fazer diferença colocar a farinha.<br />Quando o leite estiver fervendo experimente o sal, se necessário coloque uma pitada de sal. De uma única vez e sem parar de mexer (tem que ter muque), coloque toda a farinha, continue mexendo, vai virar uma bola. Está cozido quando ela soltar totalmente da panela. Vi vários vídeos no YT para me ajudar a achar esse ponto correto.<br />Coloque a massa sob uma superfície lisa e limpa, com o auxílio de um rolo de macarrão (ou não) vá sovando a massa até ela esfriar! Cuidado para não queimar as mãos, mas você deve esfriar a massa sovando, senão fica uma casquinha em volta! Para guardar enrole em um papel filme e mantenha na geladeira, mas assim que esfriar pode usar se quiser.<br />Para empanar não existe fórmula mágica e fica difícil explicar, mas o importante é não ficar ar entre a massa e salsicha, senão estoura quando fritar.<br />Aí vem a mágica da crocância...dissolva a maisena na água, passe as salsichas nesse água de maisena e depois na farinha de roscas e repita o processo, pronto, só fritar!!</span></h1>
